Soup's up for St Basils!

Last month, the trainee solicitors at Anthony Collins held a lunch club where we served up some healthy homemade tomato and basil Soup in aid of youth homelessness charity St Basils

Everyone who took part had a lovely bowl of fresh healthy soup and some bread from the comfort of the office and donated whatever they would have spent on lunch that day. 

Over three days (and nearly 18 litres worth of soup!), we managed to raise £239.50 - much-needed funds which will go towards helping homeless young people. To read more about the amazing work that St Basils do, click here

Tomato and basil soup

Serves six

Ingredients:

  • One carrot (peeled and finely chopped)
  • One onion (peeled and finely chopped)
  • Two tins of chopped tomatoes
  • Fresh basil leaves (finely chopped)
  • Tomato puree
  • One litre of vegetable stock (we used gluten-free stock to make it more allergen-friendly!)
  • Olive oil
  • Salt and pepper
  • Double cream/plant-based alternative (optional and to serve)

Method:

  • Heat one tbsp of olive oil in the bottom of a large saucepan.
  • Fry the onions and carrots in the olive oil for about ten minutes until the onions go translucent. Season generously. 
  • Stir in your tinned tomatoes, vegetable stock and basil. Bring to the boil. 
  • Simmer for 30 minutes until the carrots are soft enough to blend. 
  • Blend with a handheld stick blender until smooth. 
  • Stir through two tbsp of tomato puree. 
  • Serve with a generous amount of double cream and lots of bread!
